Next Week’s Meal Plan: 5 Easy Sheet Pan Dinners

Unlocking the potential of a cooking method (or even a small appliance) is really as simple as cooking with it over and over again. This week I’m cooking only sheet pan meals — because after Thanksgiving, I want something that’s super practical with minimal cleanup. Sheet pan dinners also have the added benefit of being meal prep-friendly and very hands-off, which kind of makes them perfect for family meals throughout the week.

This pasta dinner boggles the mind because it doesn’t require boiling water. You could use pretty much any veggies you have on hand, but this recipe uses many of the same vegetables that Thursday’s dinner does, so shopping is a little easier.

Intentionally doing breakfast for dinner early in the week means I’ll have this in the fridge for mornings later in the week too. We’re having this with some crispy sheet pan home fries too.

This sheet pan dinner will become rice bowls with a baking dish of baked brown rice and some chopped peanuts too. It has honestly been a while since I served my kids tofu, but I think the honey sesame sauce is too tasty for them to resist.

Peppers and potatoes from earlier in the week partner with chicken pieces and herbs for a one-pan dinner that will make some leftovers for lunch on Friday and Saturday too.

Admittedly, this is the sheet pan dinner I know best, perhaps because we have it at least once a month. I might get a little wild and use last night’s leftovers for topping this pizza!
