3 Tips for the Best Millionaire’s Bacon

  1. Line your sheet pan. If the prospect of scrubbing molten sugar and bacon grease from your sheet pan after a relaxing breakfast is enough to discourage you from candying bacon, we have an easy solution. Line your sheet pan with aluminum foil before adding the bacon slices. When you’re done with breakfast, you can wrap up and toss the foil and quickly run a soapy sponge over the pan for almost effortless cleanup.
  2. Toss the bacon with the sugar-spice mixture. First, not all thick-cut bacon brands are created equal. Scan the meat case and choose the thickest of the thick-cut bacon you can find. Instead of simply sprinkling the tops, you’ll want to toss the slices with the mixture of brown sugar, pepper, and ground ginger to completely coat and prep the bacon for candying. Line up the sugary strips on the pan, making sure they don’t overlap. You’ll flip the bacon halfway through cooking so both sides caramelize.
  3. Cool the bacon to set the glaze. Once the bacon is deeply colored with a ruddy hue (but not dark brown or blackened), let the slices cool for a minute on the pan to slightly set the sugar. Millionaire’s Bacon

Ingredients

  • 1/4 cup

    packed light brown sugar

  • 1/2 teaspoon

    freshly ground black pepper

  • 1/4 teaspoon

    cayenne pepper

  • 1/4 teaspoon

    ground ginger

  • 1 pound

    thick-cut bacon (about 10 slices)

Instructions

  1. Arrange rack in the center of the oven and heat to 350°F. Line a rimmed baking sheet with aluminum foil.

  2. Place the brown sugar, black pepper, cayenne pepper, and ginger in a large bowl and stir to combine. Add the bacon and toss until the slices are coated in the sugar mixture. Transfer the bacon to the baking sheet and arrange close together in a single layer, making sure the slices do not overlap. Sprinkle any remaining sugar mixture over the top of the bacon.

  3. Bake for 15 minutes. Flip the slices and bake until the bacon is chewy, deeply caramelized, and the fat is rendered, 15 to 20 minutes more.

  4. Remove the bacon from the oven and set aside until the sugar sets slightly, about 1 minute. Use tongs to transfer the slices to a clean sheet of aluminum foil or parchment paper. Cool for 5 minutes before serving.
